Peter Reinhart’s Challah recipe from The Bread Baker’s Apprentice

I put Reinhart’s recipe in metric and made very minor adjustments to technique (basically the yeast prep).

Challah is so delicious and addictive. At my kids’ preschool, I learned to tear challah rather than cut it, and that it is acceptable for a kid to answer, “Both!” to the question, “Butter or cream cheese?”

I prefer butter, but plain and squished in your hand while driving is pretty awesome too.

A couple breads are gifts to a nutritionist friend who is analyzing my food intake. As an athlete who doesn't focus on counting stuff or think much about protein, I have always wondered if I get enough protein.
Preliminary results: I do! And I also get more fat than I probably should :( I'm going to try for a little less animal fat and a little more chick peas. 
Breads are clockwise from top right and have bread flour, rye, and turkey red wheat in varied ratios: 
cranberry walnut / plain / cheddar, rosemary, black pepper /pecorino romano, rosemary, black pepper / broccoli, garlic, soppressata, provolone calzone .
